Checklist of Closing Duties for Restaurant/ Mobile Restaurant Managers

All restaurant managers need a checklist to be maintained to ensure that everything is taken care of before the restaurant closes down every day. As a manager you need to make sure that everything is cleaned, prepped, and ready for the next day of business.

Restaurants usually have the closing responsibilities demarcated into three main categories:
·        Front-of-house closing list.
·        Back-of-house closing list.
·        Manager’s closing list.

Generally, floor managers, head servers, chefs, line cooks, or general managers are responsible for ensuring that all the members od the staff have completed all their daily closing tasks. These heads do not have to do anything themselves, but have to monitor and check that all the tasks are done without fail.

Your employees are accountable for their closing duties. As a manager, you either can print multiple copies of checklists that the person with the allotted duties each night, need to fill up, maintain, and submit. You can also laminate a big copy for your staff for checking off with a dry erase marker as and when they complete the tasks.

A tiny bit responsible effort at the end of every employee before closing down, will help you ensure a smooth, seamless, efficient, and safe opening the following day. This is good for both your employees and your customers.

The Front-of-the-house and Bar Cleaning Checklist would include the following tasks:
1.      Wiping and sanitizing all the tables and chairs.
2.      Flipping chairs on top of the tables.
3.      Pulling floor mats from entry and from behind the bar.
4.      Cleaning spills on the floors and behind the bar.
5.      Sweeping and mopping all the areas.
6.      Replacing all the mats.
7.      Fine-tune placement of tables and chairs, keeping things in array.
8.      Collecting dirty rags and launder.
9.      Emptying and cleaning the coffee machines and holding pots, soda machine, beer taps and lines, etc.
10.   Clean and shine any glass or reflective services.
11.   Sweeping and mopping bathrooms, deep cleaning toilets, and mirrors and re-stocking toiletries.
12.   Turning off all the front house equipment and lights, including the bar.
